Christmas Eve

This year Danny and I have decided running from one family to the next in the same day is too hectic. So today we will be going to Danny’s family Christmas. Then tomorrow we can spend the day with my family. Danny’s mother will be doing most of the baking and his brothers love cooking and have prepped for a wonderful meal (following the Seahawks game of course!). With all this there is plenty of food but the boys were worried there wouldn’t be enough pie. So our contribution to this feast will be Caramel Apple Pie, per unanimous vote.

This is super easy for us since I enjoy canning the excess apples from our apple tree. I make the apple pie filling from the Ball Home Preserving Book and right now I have about 4 quarts sitting in the cupboard.  I use this apple pie filling and then add the topping the Pioneer Woman makes. This morning I realized with the recipe below we could easily just can the apples in lemon water and do the whole recipe, C’est la vie.
